Cauliflower Popcorn

Serves 4

Preparation time: 10 minutes

Cooking time: 15 minutes

This is a great way to get in a serving or two of vegetables. The long roasting caramelizes cauliflower’s natural sugars and makes it sweet so it tastes like a snack.

  • 1 head cauliflower
  • ¼ cup olive oil
  • 1 tablespoon salt (great with garlic salt too)
  1. Preheat oven to 425°F.
  2. Trim head of cauliflower into bite sized florets.
  3. Toss the florets with the olive oil and salt.
  4. Spread them on a baking sheet and bake for 45 minutes to an hour, turning every 15 minutes or so until the florets are golden brown.
