Cucumber Dip for Vegetables
Makes about three cups
Preparation time: 15 minutes
Chilling time: one hour
This is a perfect accompaniment to a vegetable platter, much better than those metallic tasting dips that come with the pre-made platters. A little chopping and mixing and you have the makings of a party.
- Two 8-ounce packages of cream cheese
- 2 tablespoons of mayonnaise
- 1 large cucumber peeled, seeded and chopped
- 1 medium onion chopped
- 3 squirts of Worcestershire sauce
- Salt to taste
- Bring the cream cheese to room temperature to make it easier to mix.
- Peel a large cucumber, slice it in half lengthwise, scoop out the seeds and dice what’s left.
- Dice the onion.
- Put all the ingredients in a blender and mix until smooth.
- Chill for about an hour.
- Serve with bite-sized carrots, celery, cauliflower, broccoli and cherry tomatoes.
