Cucumber Dip for Vegetables

Makes about three cups

Preparation time: 15 minutes

Chilling time: one hour

This is a perfect accompaniment to a vegetable platter, much better than those metallic tasting dips that come with the pre-made platters. A little chopping and mixing and you have the makings of a party.

  • Two 8-ounce packages of cream cheese
  • 2 tablespoons of mayonnaise
  • 1 large cucumber peeled, seeded and chopped
  • 1 medium onion chopped
  • 3 squirts of Worcestershire sauce
  • Salt to taste
  1. Bring the cream cheese to room temperature to make it easier to mix.
  2. Peel a large cucumber, slice it in half lengthwise, scoop out the seeds and dice what’s left.
  3. Dice the onion.
  4. Put all the ingredients in a blender and mix until smooth.
  5. Chill for about an hour.
  6. Serve with bite-sized carrots, celery, cauliflower, broccoli and cherry tomatoes.
