Italian Beef Sandwiches

Preparation Time: 15 minutes

Cooking Time: 4-5 hours

Here is very simple recipe that is great for those Sunday football parties. The long slow cooking is critical; just make sure the liquid doesn’t simmer away before the beef is done.

  • 1 ½ pounds chuck roast (cubed)
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon Italian seasoning
  • 1 tablespoon oregano
  • 1/3 cup onion (Finely diced)
  • 2 cloves garlic (crushed)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Horseradish sauce
  • Rolls
  1. Cube the beef into two-inch cubes
  2. Add all of the ingredients to the pot and simmer covered for three to four hours until the beef falls apart.
  3. Stir from time to time and add more water if necessary.
  4. Uncover the pot and watch carefully for the last 15 minutes to evaporate moisture.
  5. Keep the beef warm and serve with horseradish sauce and small, bite-sized rolls as a hors d’œuvres ; or mound the beef onto a hard roll and have it for lunch, also with horseradish sauce.
