Italian Beef Sandwiches

Here is very simple recipe that is great for those Sunday football parties. The long slow cooking is critical; just make sure the liquid doesn’t simmer away before the beef is done.
- 1 ½ pounds chuck roast (cubed)
- 2 cups beef broth
- 1 cup water
- 1 tablespoon Italian seasoning
- 1 tablespoon oregano
- 1/3 cup onion (Finely diced)
- 2 cloves garlic (crushed)
- 1 teaspoon salt
- 1 teaspoon pepper
- Horseradish sauce
- Rolls
- Cube the beef into two-inch cubes
- Add all of the ingredients to the pot and simmer covered for three to four hours until the beef falls apart.
- Stir from time to time and add more water if necessary.
- Uncover the pot and watch carefully for the last 15 minutes to evaporate moisture.
- Keep the beef warm and serve with horseradish sauce and small, bite-sized rolls as a hors d’œuvres ; or mound the beef onto a hard roll and have it for lunch, also with horseradish sauce.
