Spicy Sausage Quesadillas

Quesadilla is Spanish for a grilled cheese sandwich (loosely translated that is). But it can be a lot more than that. Basically, it’s just a flour tortilla filled, folded and then either toasted or fried. The filling can be cheese, salsa, meat, refried beans, spinach, chicken or whatever you want. This one is filled with a mixture of sausage and cheese with some jalapeno to turn up the heat. Once you master this, try changing out the fillings. Experiment a little.
- Four 10-inch flour tortillas
- ½ pound sausage
- 1 cup shredded cheddar or Monterey Jack
- 1 jalapeno pepper
- 2 tablespoons minced onion
- 2 tablespoons minced cilantro
- Salt and pepper to taste
- Salsa
- Preheat oven to 500°F.
- Cook the sausage and drain.
- Chop the jalapeño into small pieces carefully. (Wear rubber gloves and don’t rub your eyes.)
- Mince the onion.
- In large bowl, stir together the sausage, cheese, jalapeño peppers, onion, cilantro, salt and pepper.
- Arrange 1/8 of the filling on each tortilla, covering half of it. Fold the tortilla over to make a half-moon.
- Place quesadillas, not touching, on shallow baking pans.
- Bake about five minutes until tortillas are crisp and golden
- Transfer to large cutting board and cut each quesadilla into four wedges.
- Serve with salsa.
