Spicy Sausage Quesadillas

Serves: 4

Cooking time: 5 minutes

Quesadilla is Spanish for a grilled cheese sandwich (loosely translated that is). But it can be a lot more than that. Basically, it’s just a flour tortilla filled, folded and then either toasted or fried. The filling can be cheese, salsa, meat, refried beans, spinach, chicken or whatever you want. This one is filled with a mixture of sausage and cheese with some jalapeno to turn up the heat. Once you master this, try changing out the fillings. Experiment a little.

  • Four 10-inch flour tortillas
  • ½ pound sausage
  • 1 cup shredded cheddar or Monterey Jack
  • 1 jalapeno pepper
  • 2 tablespoons minced onion
  • 2 tablespoons minced cilantro
  • Salt and pepper to taste
  • Salsa
  1. Preheat oven to 500°F.
  2. Cook the sausage and drain.
  3. Chop the jalapeño into small pieces carefully. (Wear rubber gloves and don’t rub your eyes.)
  4. Mince the onion.
  5. In large bowl, stir together the sausage, cheese, jalapeño peppers, onion, cilantro, salt and pepper.
  6. Arrange 1/8 of the filling on each tortilla, covering half of it. Fold the tortilla over to make a half-moon.
  7. Place quesadillas, not touching, on shallow baking pans.
  8. Bake about five minutes until tortillas are crisp and golden
  9. Transfer to large cutting board and cut each quesadilla into four wedges.
  10. Serve with salsa.
