Spinach Frittata
Serves: Eight as an appetizer, four as an entrée.

A frittata is basically the kind of omelet you get at most breakfast buffets. A true omelet has the filling in the center surrounded by egg, while a frittata has the filling ingredients all mixed in. Both can be delicious.
- 1 tablespoon olive oil
- 1 tablespoon onion, minced
- 3 eggs
- ¼ cup grated Parmesan
- ½ teaspoon dried oregano
- 1/8 teaspoon ground pepper
- 1 package frozen spinach
- Cook the frozen spinach according to the package directions. Drain. Put the spinach in a paper towel and squeeze to remove as much moisture as possible.
- In a bowl, combine the eggs, half the Parmesan, the oregano, pepper and spinach and mix well.
- Heat the oil in a skillet, add the onion and cook until tender, about five minutes.
- Pour in the egg mixture and cook, stirring slowly over low heat until the eggs set and the edges are lightly browned.
- Sprinkle on the remaining cheese and place under the broiler lightly browning the cheese.
- Cut into two-inch squares and serve as an appetizer or cut in fourths and serve as a main course.
