Spinach Frittata

Serves: Eight as an appetizer, four as an entrée.

Preparation time: 20 minutes

Cooking time: 20 minutes

A frittata is basically the kind of omelet you get at most breakfast buffets. A true omelet has the filling in the center surrounded by egg, while a frittata has the filling ingredients all mixed in. Both can be delicious.

  • 1 tablespoon olive oil
  • 1 tablespoon onion, minced
  • 3 eggs
  • ¼ cup grated Parmesan
  • ½ teaspoon dried oregano
  • 1/8 teaspoon ground pepper
  • 1 package frozen spinach
  1. Cook the frozen spinach according to the package directions. Drain. Put the spinach in a paper towel and squeeze to remove as much moisture as possible.
  2. In a bowl, combine the eggs, half the Parmesan, the oregano, pepper and spinach and mix well.
  3. Heat the oil in a skillet, add the onion and cook until tender, about five minutes.
  4. Pour in the egg mixture and cook, stirring slowly over low heat until the eggs set and the edges are lightly browned.
  5. Sprinkle on the remaining cheese and place under the broiler lightly browning the cheese.
  6. Cut into two-inch squares and serve as an appetizer or cut in fourths and serve as a main course.
